Did you know there are 40,000 varieties of rice? September is also National Rice Month and I’ve been compiling recipes on a special Pinterest board this whole month, but I wanted to be sure to share my own recipe, too. Today I’m sharing how to make Spanish yellow rice.

Is Yellow Rice Good for You?

Many people want to know, is yellow rice healthy? The truth is rice is a grain that is high in starch and carbohydrates. While brown rice is considered a whole grain, white rice is not. Rice is a very common side in Puerto Rican dishes because it is cheap and can be stretched in a meal if cooked with beans and other vegetables.

I would say rice can be healthy if it’s part of a well-balanced plate and according to the Clevela/nd Clinic, a serving of cooked rice should be about 1/2 cup to maintain a healthy weight.

How to make Spanish yellow rice

Now to make your yellow rice in the style of Puerto Rico, the key is to add the right seasoning. So you just want to know the secret… how to make Puerto Rican yellow rice? The two major ingredients I was taught to use are Sazon and Sofrito. I’ve used the Goya brand of Sazon all of my life but in light of recent events, it’s understandable if you didn’t want to use their brand. I would recommend Badia Sazon with Saffron. The main thing this will do is add color and they have one specifically for use in yellow rice recipes.

As for sofrito, you can buy store-bought, but I always recommend making your own. You can check my sofrito recipe here.

How to make Spanish yellow rice in a rice cooker by Zully Hernandez of foodiezoolee.com. This recipe is made with ingredients in the tradition of my Puerto Rican heritage. The best part is it tastes authentic even though it is made in a rice cooker.

Ingredients
  

  • 3 Cups Jasmine rice
  • 2 1/2 Cups water Make this 3 cups if you are omitting corn
  • 15 Oz Corn, canned Note to adjust salt if corn is salted
  • 1/4 Cup vegetable oil
  • 1 Oz Sofrito
  • 1 Tsp Sazón
  • 1 Tbsp salt
  • 1 Tbsp garlic Minced
  • cilantro Chopped

Instructions
 

  • Place all ingredients, including the water of the canned corn, in rice cooker, stir together, and start rice cooker.
  • Give the rice a stir to fluff. Serve.
