Based on the title of this recipe, you may be shocked to learn I am not really a mustard lover! In fact, I only tried mustard 13 years ago because it was a pregnancy craving. More on that another time, but if you want an easy prep recipe for breaded chicken tenders keep reading.
Crispy Oven Chicken Tenders
Chicken tenders are a regular protein in our house. They are so easy to make and to change it up you just have to try different seasoning combinations. The graphic below, by Women’s Health Magazine, is a great resource for a few options. I have actually been considering making a Latin version of this!
How to bread chicken tenders
I usually bread my chicken tenders in the same way I have my bistec. But I was really curious to know if I could bread my chicken using mayonnaise instead of eggs. I know mayonnaise is basically eggs and oil – so maybe it might work?
First I prepared the seasoning mixture and bread crumbs. I placed all the spices directly into the mayonnaise and mixed. I also poured bread crumbs onto a separate plate for later.
Next, I prepped the chicken tenders. When you are getting ready to bread chicken, you have to make sure to pat the surface dry. I usually will use paper towels for this. This will ensure a crispier finish and allow the breading to properly stick to the protein.
Then I spread the seasoned mayonnaise all over the chicken. After all the pieces were properly coated, I coated each in the bread crumbs and then placed them in a glass 3-quart baking dish, making sure they are spaced properly to avoid crowding. This is the key to a crispier chicken so they have enough room to vent without moistening the other pieces of chicken.
Lastly, I baked the chicken tenders at 375 degrees Fahrenheit for 25 minutes.
