Lemon Cookies
If you are looking for an easy cookie recipe that isn't super sweet, these lemon cookies are definitely the way to go. Make 3 dozen cookies in about an hour (including cooling).

for the dough
- 2.5 cups flour
- 1/3 cup sugar
- 1 tbsp lemon peel grated
- 1 cup butter cold
for the icing
- 1 cup confectioners sugar
- 1/2 tsp lemon peel grated
- 4 tsp lemon juice (or more depending on your preference)
Preheat oven to 325 degrees.
In a large bowl, mix flour, sugar, and lemon peel. Cut in butter until crumbly. Transfer the mixture to a clean counter and knead gently to form a smooth dough. Be patient, I promise it'll come together after 2-4 minutes.
Roll dough onto a lightly floured surface. Shape it into a rectangle. Cut rectangle into even squares and then cut squares diagonally into triangles. Place one inch apart on ungreased baking sheets.
Bake about 15 minutes or until golden brown. Move to wire racks to cool completely while you make the icing.
