Lemon Cookies

If you are looking for an easy cookie recipe that isn't super sweet, these lemon cookies are definitely the way to go. Make 3 dozen cookies in about an hour (including cooling).

Ingredients
  

for the dough

  • 2.5 cups flour
  • 1/3 cup sugar
  • 1 tbsp lemon peel grated
  • 1 cup butter cold

for the icing

  • 1 cup confectioners sugar
  • 1/2 tsp lemon peel grated
  • 4 tsp lemon juice (or more depending on your preference)

Instructions
 

  • Preheat oven to 325 degrees.
  • In a large bowl, mix flour, sugar, and lemon peel. Cut in butter until crumbly. Transfer the mixture to a clean counter and knead gently to form a smooth dough. Be patient, I promise it'll come together after 2-4 minutes.
  • Roll dough onto a lightly floured surface. Shape it into a rectangle. Cut rectangle into even squares and then cut squares diagonally into triangles. Place one inch apart on ungreased baking sheets.
  • Bake about 15 minutes or until golden brown. Move to wire racks to cool completely while you make the icing.

for the icing

  • In a small bowl, mix confectioners sugar, lemon peel and lemon juice (customize based on your preference for consistency and taste). Drizzle over cookies and let it set.
