How to make Meringue
McCall's recipe for meringue

- 3 egg whites at room temperature
- 3/4 tsp lemon juice
- 1/3 cup sugar
Preheat oven to 275 degrees Fahrenheit.
In a medium bowl, whip egg whites and lemon juice until they peak. Then add sugar a couple tablespoons at a time until fully incorporated. The mixture will be white and shiny.
Spoon meringue onto a baking sheet at least 2 inches apart.
Bake for 1 hour (I know this seems like a long time, but pulling them out sooner will have soft middles). If you still want a slightly chewy center, then bake for 45 minutes. Once they are done, carefully remove and let cool for 30 minutes.
