Gluten Free Peanut Butter Cookies

We’ve all been there. We want to be a good parent and have some treats available for dessert but you are low on ingredients. What if I told you these tasty AND GLUTEN FREE peanut butter cookies were made with just 3 ingredients? Ok so now that I’ve got your attention let’s move on to the details! 

Baking is one of my all-time favorite ways to prepare food, but it doesn’t mean I want to always spend a lot of time there. What non-bakers do not realize is that cookies are the easiest and quickest thing to bake. These gluten free cookies are no exception!

Gluten Free Peanut Butter Cookies


For this recipe, all you will need is a cup of sugar, a cup of peanut butter, and one egg. That is it! No baking powder, no special tools – just these ingredients, a quick mix and you’re ready to bake. Once you plop them onto your baking sheet, you have to be sure to make a criss cross pattern on them with a fork. This is probably one of my favorite parts of making peanut butter cookies 🙂

But why do we put hash marks on peanut butter cookies?

Did you ever wonder why peanut butter cookies have hashmarks made on them with a fork? For one, it makes them easily identifiable to anyone with a peanut allergy. Second, especially for this recipe, there is a lot of peanut butter that makes up the dough. This causes the cookie dough to be very dense and hard to bake through. So flattening the cookie dough helps it to cook more evenly. So go ahead and stick a fork in those cookies!

Gluten Free Peanut Butter Cookies

Easy gluten free peanut butter cookies with just 3 ingredients. I'm sure you already have them and these will be done in a flash.

Cook Time 10 mins
Total Time 15 mins

Ingredients
  

  • 1 cup sugar
  • 1 cup creamy peanut butter
  • 1 egg

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • Mix ingredients together.
  • Drop an ice cream scoop worth of cookie dough onto a baking sheet. Be sure to space them a couple inches apart. Mark criss-cross pattern on top of each cookie with a fork.
  • Bake for 10 minutes.
  • Cool on a wire rack, and go keep busy with something else or you'll gobble them up!
