Vegetable Penne (One Pot Meal)

I love couponing and a lot of times my weekly menu for our dinners is directly related to items I was able to find on sale. Barilla pasta is already my favorite brand and so when I saw that I could get a box of their new ‘Pronto’ penne for basically nothing, I jumped at the deal. 

This ‘new’ pasta is supposed to cook without the traditional boil and drain. I’m not sure how that totally works, but I have to be honest and say I’ve done this with regular pasta, too.

Since it’s meant to be used for one-pot meals, I decided to make a Vegetable Penne and used some Trader Joe’s Vodka Sauce over all of it.

I’m actually a regular user of CouponMom.com, but I could not find the deal I used as part of this recipe on her site. Here is a good replacement blog post on the Barilla Pronto Pasta. And Barilla’s website actually has quite a few recipes for the penne, too. You can check those out here (this is NOT a sponsored post, I seriously just love Barilla pasta).

Vegetable Penne

Make this one pot pasta and minimize your use of pots and pans for dinner tonight.

Ingredients
  

  • 12 oz Barilla Pronto Penne
  • 12 oz vodka sauce
  • 3/4 cup sweet peppers roughly chopped
  • 1/2 cup asparagus sliced
  • salt to taste
  • pepper to taste

Instructions
 

  • Cook pasta according to box instructions.
  • Prep vegetables and add to pasta near the end of cooking pasta. Let simmer until tender.
  • Add vodka sauce. Incorporate. Serve hot or cold!

  1. This is a great easy recipe – I love the vodka pasta from trader joes and a one pot receive?! I have never heard of that but now I must try!

    1. Hey great question! Any tomato sauce with a splash of cream would be a great alternative. The vodka sauce has its name because it is used to bring out the flavor of tomatoes and red peppers used in making the sauce but the actual content of alcohol in this canned version is probably zero since it’s cooked down and burned. I’ve read that it depends on how long it is cooked and to be honest since I used the canned version I wouldn’t know for sure.

      But I did look up the ingredients and potato vodka is actually listed 2nd to last – so it is definitely used for making it.

  9. Barilla Arrabbiata sauce is one of the few pasta sauces that came pre-made with a good spice (hot) level and not much was required to supplement that I normally have to do with other sauces. I love Barilla myself, but often find it really hard to find here!
