So I’m back from our month long beach vacay and I am feeling so pumped and refreshed! I’ve been dying to post this Black Bean Corn Salsa for you guys. It’s such an easy and tasty recipe.
Salsa is just the best thing to serve at grill sessions and pool parties. It’s cool and refreshing – and it’s not filled with cream based products, which to me are very bleh in the heat (the high was 95 yesterday! )
So let’s get right into this recipe and please stay tuned for a really cool tasting post tomorrow (which help to inspire this salsa, too!).
This is one of those recipes where you can add or omit things you like and it will turn out just as good!
Black Bean Corn Salsa
I would advise for you to prepare it a few hours ahead of when you intend on serving it so the flavors get marinated into the veggies, but it honestly tastes pretty awesome right away, too.
Other ideas for this recipe include:
- you can add it to tomato soup
- you can include it in a salad or sandwich
- you can use it as a bed for roasted chicken breasts (or other protein) for dinner
- you can add in some avocado! (and the only reason I did not is because I plan to keep it in the refrigerator a couple days)

Black Bean Corn Salsa
Ingredients
- 1.5 cups corn
- 1.5 cups black beans
- 1 medium red onion diced
- 1 cup tomato diced
- 5 or 6 green onions sliced
- .5 cup cilantro chopped
- .25 cup olive oil
- 1-3 tbsp lime juice to taste
Instructions
- Combine corn, black beans, onions, tomato, and cilantro in a medium bowl.
- Add olive oil and about a tablespoon of lime juice and mix. Add more lime juice if your tastebuds prefer.
- Cover and refrigerate 2-3 hours to marinate.
