We have a wonderful friend who keeps a garden and shares all types of goodies with us. About a month ago, we were blessed with some carambola, or what a lot of people refer to as starfruit.
To me, starfruit tastes like mango and papaya put together. It’s a great treat that is rich in antioxidants, potassium, and vitamin C. Now to be completely honest, this isn’t something I regularly buy so when we got the bag full of the fruit I really didn’t know what I should do with it.
I put some of it into smoothies, but then there were a few left and time was running out to use them. I decided I would try and preserve them a bit in the form of a jam.
Starfruit recipe for jam
I came up with the recipe below, which goes well with water crackers or even saltines. I even thought this might be good to smooth over some chicken and bake in the oven – mmm, can you imagine what that would taste like?!
Ingredients
- 1 cup starfruit chopped
- 1/2 cup honey
- 1/4 cup water
- 1/4 cup grated ginger
- 1 tsp lemon juice
Instructions
- Put all ingredients together into a bowl and let it "marinate" in a refrigerater for at least an hour.
- Pour the mixture into a blender and puree by pulsing a few times.
- Put everything into a medium saucepan and cook over low-medium heat for about 35 minutes. Keep an eye on your mixture and stir frequently.
- Remove from heat once mixture has reached a boil and pour into a small glass jar.
- Refrigerate for up to 2 weeks.

My husband and I bought a condo in Florida For the cold winters. There were so many mangos and they were so reasonably priced, I couldn’t resist. I love eating them just peeled and sliced. Put in salads is good too. I had a lot, so I thought maybe I could make jam. Mango jam is especially delicious, sweet and a little tart. I make my jam without pectin and I have been very successful. It needs to be cooked longer.
Pretty soon I went jam crazy!! I have made:

Pineapple
Blackberry (seedless) I hate the seeds
Raspberry “. “
Peach
Pear
Star fruit
Plum
Strawberry
Raspberry/blackberry (seedless)
I give most of it away, I love making it and friends love getting it!!
