Today’s dinner was inspired from an app I use daily. I’m a Noom user and each day the personal coach gives me tips, information, and challenges to help me reach my fitness goals. On this day, I was challenged to try a new vegetable or have something I haven’t in a long time.
I headed to my local Publix and walked around the produce department. I thought maybe a root like yucca – but it’s something I eat at least monthly so I changed my mind. I ended up choosing eggplant.
I breaded and baked my eggplant and served it with ramen noodles -my guilty pleasure I eat too often. And don’t judge because there are SO many things you can make with ramen noodles!
Breading the eggplant was done much in the way I make my breaded steak.
Delicious breaded eggplant that is prepped and ready to eat in about 30 minutes.
Ingredients
- 1 eggplant
- 1 egg
- 3/4 cup breadcrumbs (or panko)
Instructions
- Preheat oven to 375 degrees F.
- Cut eggplant into 1/2 inch slices (I like medallions, but it can be lengthwise, too).
- Dip eggplant slices in egg coating evenly.
- Toss eggplant slices in breadcrumbs, covering each side.
- Arrange eggplant slices on a baking sheet and bake for 20-25 minutes. Slices should feel soft.
- Serve and enjoy!
It turned out really good – the eggplant was crisp on the outside and tender on the inside. This would make a good filling as a veggie burger, too!
