There are many food holidays celebrated around the globe. In the United States, July 1st is National Ginger Snap Cookie Day. And to celebrate today’s holiday, below are three recipes ginger snap recipes I would love for you guys to try.

This lemon tart adds some bright citrus flair to its gingersnap crust. It’s the perfect way to reimagine the classic cookie into a new and exciting dessert.
Gingersnap Toffee by Life’s Ambrosia:
This toffee is a fun and festive way to get your gingersnap fix. White chocolate adds richness to this dessert, and sprinkles adorn the top. This recipe does require two hours to chill, but is a cinch to pull together.
