The nostalgia of baking bread

My favorite thing about baking bread is how the process makes our home smell so good. It reminds me of visiting a Cuban bakery on the way to school each morning back in the day. Did you have a corner store or place you visited on the way to school? It’s easy to see why the smell of dough and fresh bread is nostalgic for me.

Using milk instead of water in bread dough

I wanted to mention that the liquids in this recipe call for mostly milk instead of water. The reason I prefer to use milk in my dough is that it actually makes the crust softer. When applying this to other recipes, however, I just need to advise that you always add a bit more milk than the water listed for recipes because milk has 10% less water. The rest of its contents are fat and protein. The recipe I am sharing is fine as is so you should not have issues with moisture.

So even though we are calling these burger buns, you should keep in mind these would be good for any sandwich. It is really tasty and lends itself to many uses. Another idea could be to dice up a loaf once it’s baked and make your very own croutons for salads.

Brioche Burger Buns

This burger bun recipe is pretty easy to make and will have your house smelling so good. The recipe is intended for 8 buns, but they are quite large and you can split the dough to double the servings (16) and make the burger buns a bit smaller. I've made them both ways and they still fit a 1/4 lb. burger patty. Please also note this recipe calls for a bread maker for mixing and kneading the dough, but you may also do this part manually or with the dough hook attachment of your stand mixer.

Equipment

  • Bread maker
  • Wire racks

Ingredients
  

  • 1 ¼ cup milk
  • 2 tbsp water
  • 1 tbsp active dry yeast
  • 3 tbsp sugar
  • 1 egg large
  • 3 cups bread flour
  • ¼ cup flour
  • 1 tsp salt
  • 3 tbsp butter softened

Instructions
 

  • Put all the ingredients except the butter in bread machine in the order prescribed by the manufacturer and set on dough setting.
  • During the last 10 minutes of the dough kneading cycle, drop 1 tbsp. of butter about every minute or until each tbsp. appears to have mixed into the dough.
  • When the dough is ready (my bread machine has a 1 hr. and 30 min. dough cycle but yours may differ), remove from the bread machine and cut into 8-16 pieces (8 for large buns and 16 for smaller buns). Preheat oven to 200 degrees Fahrenheit, then turn it off. This will provide a warm place for the dough to rise. I usually set mine on the stove top. Line two baking sheets with parchment paper or spray with cooking spray.
  • Shape each piece of dough into a ball and pinch ends underneath to create a smooth surface. Set each ball on the baking sheet allowing 2-3 inches between them.
  • Spray the buns with cooking spray. Place on stovetop and allow them to rise for about 45 minutes.
  • Place a shallow baking pan with 1/2 cup of water in the oven. This is to create moisture for the bread as it bakes. Set oven to 400 degrees Fahrenheit and bake for 20 minutes or until the tops of the buns are a deep golden brown. Transfer the buns to a wire rack to cool.
  • Optional but recommended to soften the tops of the buns: Brush the tops lightly with butter or olive oil.

Notes

This recipe calls for a bread maker for mixing and kneading the dough, but you may also do this part manually or with the dough hook attachment of your stand mixer.
