Starfruit filled Brown-Sugar Shortbread Cookies

Earlier this year, I found one of my favorite treasures ever – a McCall’s Cookbook from 1963 (a first printing). Within it is the most basic cookie – a brown-sugar shortbread cookie – and that’s what I put together here with a starry twist!

I am someone who likes to make things up as I go in the kitchen, but I couldn’t pass up on such a foundational find.

It isn’t in the best shape, but I like to think that it once belonged to someone who loved being in the kitchen as much as I do.

Note: You will need to refer to my recipe for Starfruit Jam for making these cookies. Make the dough first, and then the jam while the dough is refrigerated for a couple hours. You can also use this shortbread cookie recipe as pie crust – so good!

Brown-Sugar Shortbread Cookies

Ingredients
  

  • 1 cup butter softened
  • .5 cup brown sugar
  • 2.5 cups all-purpose flour sifted
  • .5 cup Starfruit Jam see my recipe link in post
  • 1 tbsp confectioners sugar

Instructions
 

  • In a large bowl, beat butter and sugar until light and fluffy.
  • Stir in flour until smooth and well combined. Dough will be stiff.
  • Cover and refrigerate dough for 2-3 hours. Make starfruit jam during this time.
  • Preheat oven to 325 degrees (McCalls says 300).
  • Cut cookies. Top each with about a tsp of Starfruit Jam. Sandwich with another cookie (I cut out a star in my topper cookies).
  • Place cookies at least 1 inch apart and bake for 15 minutes.
  • Allow to cool and sprinkle with confectioners sugar.

  2. I love starfruit but have never had it as a jam. How interesting. I particularly like that there’s ginger in the jam. I’m really curious about how starfruit jam tastes.

    1. It’s really good and I make it to preserve the fruit since once it’s ripe it doesn’t take much time to go bad.

  11. Hi! We have a starfruit tree in our backyard. Came across your recipe which is amazing and easy to make! Not only did I make the starfruit jam for the cookies but I’ve been using it as a topping for my hot Grapenuts cereal, swirling it in my plain Greek yogurt and it’s a great filling for my homemade crepes! The starfruit-ginger combo is new concept to me that I can’t seem to get enough of! Will definitely be making the jam again! I’m thinking mini pies or tartlets!

For the upcoming holidays, you could even give small (maybe 4 oz.) mason jars of the jam as a gift. In fact, you can even prep yogurt in advance in these (2-3 days) with the jam for a quick snack.
