Rotisserie chicken is actually one of my favorite beach foods. Though we usually take week-long beach getaways, sometimes when we are just going for the day I plan a quick meal. I love to stop by Boston Market for their Signature Rotisserie Chicken and lunch is done!
And even though my husband is more of a steak guy, he is perfectly satisfied with this chicken for lunch. Jazlynn also loves rotisserie chicken – more so than chicken nuggets and that’s saying a lot for any kid!
Even more awesome is that their chicken is always fresh and never frozen. They start with an all natural chicken fed only quality grains, vitamins and minerals – no added hormones or steroids. The best part about taking this meal to the beach is it stays warm with the sun while you enjoy time with family!
Rotisserie Chicken Salad
The recipe I’m sharing with you is actually be super easy. For the beach, you can just put the dry ingredients in a ziploc baggie and put it all together in minutes.

Rotisserie Chicken Salad for #RotisserieChickenDay
Ingredients
- 1 Rotisserie Chicken about 2 lbs
- 1/4 cup walnuts chopped
- 1 oz golden raisins
- 1 oz dried cranberries
- 2 tbsp mayonnaise
Instructions
- Debone rotisserie chicken. Place all chicken into a large bowl.
- Add remaining ingredients and mix until well blended.
- Serve immediately or place in air-tight container for 3-5 days.
