The fun thing about cooking – sometimes your cravings can drive you to be creative.
I threw this recipe together while I was preparing dinner for two reasons – I was fighting the urge to grab something unhealthy and it was what I figured out with what I had in stock!
The ingredients are simple and it took all of 5 minutes (this almost includes consumption!)
Avocado Tomato Salad
An easy salad made with avocado, tomatoes, and fresh mozzarella that can be eaten alone or be used to top bruschetta.
Ingredients
- 12 cherry tomatoes, halved
- 1 avocado, diced
- 3/4 cup fresh mozzarella pearls
- 1/4 cup italian dressing
Instructions
- Combine tomatoes, avocado, and fresh mozzarella.
- Mix in italian dressing.
- Serve and enjoy!
