To make it simple, meal planning will save you time and money. Don’t get home from work or reach the late afternoon with the burden if figuring out what to make for your family. Planning meals ahead of time may allow you to buy certain ingredients in bulk.

Instant Pot Chicken and Potatoes recipe by Tiffany at Creme de la Crumb. This recipe would go well with other vegetables like roasted carrots or asparagus, but I personally will be serving it over white rice. You can see my Puerto Rican white rice recipe here. Tip: Be sure to cook extra chicken to use in Tuesday’s recipe!

Easy Chicken Tacos by Sara at Dinner at the Zoo. If you made enough chicken for yesterday’s dinner from this week’s plan, then you’ve just got to prep the taco fixings and dinner will be easy peasy.

Cheesy Ground Beef Pasta by Cooking with Mima. If you have made of my sofrito in your freezer, you can bypass quite a bit of the ingredient list with a few ounces of it and still pack the same amount of flavor. If not, I highly recommend you follow her tip about topping with fresh parsley before serving. So very good!

Leftovers – Fend For Yourself (FFY).

Here is a recipe for Leftover Chicken Shepherd’s Pie by Rebecca at Homemaker’s Paradise. This can be switched up with pretty much whatever you’d have on hand.

Easy Flatbread Pizza by Where Is My Spoon blog. In her post, this blogger also shares about the various types of breads you can use for your homemade pizza. I personally think Bagel Thins or Naan bread work great.
