Brown-Sugar Shortbread Cookies

In a large bowl, beat butter and sugar until light and fluffy.
Stir in flour until smooth and well combined. Dough will be stiff.
Cover and refrigerate dough for 2-3 hours. Make starfruit jam during this time.
Preheat oven to 325 degrees (McCalls says 300).
Cut cookies. Top each with about a tsp of Starfruit Jam. Sandwich with another cookie (I cut out a star in my topper cookies).
Place cookies at least 1 inch apart and bake for 15 minutes.
Allow to cool and sprinkle with confectioners sugar.
