If you’re looking for a quick lunch recipe, my meatball sub recipe is sure to win you over. It’s just a few ingredients and they taste delicious every time!

We’re at the beach this weekend and rented out a beautiful condo with a few friends and it has so much room. But my favorite part is the kitchen!

We really need to invest in a vent hood in our kitchen – it’s the best thing to avoid smoke in the house when you love to cook like me.

As soon as my husband showed me the listing, I knew I wanted to enjoy the kitchen and cook up some fun recipes. And my picture doesn’t do it justice… trust me!

Meatball Subs

Before we headed down to the beach, I thought of making something the kids can eat whenever they tired from jumping the waves. These three-ingredient meatballs came to mind right away.

Meatball Sub Recipe

Equipment:
Crock-Pot

Ingredients:
1 lb of frozen meatballs
16 oz jar of tomato and basil sauce
1 cup grape jelly

Directions:
1. Dump all ingredients in your crockpot and set on high.
2. After 2 hours, serve and enjoy! (They should be ready in 1, but I think they have better flavor with at least 2)

When we came up from the water, I ate some in a sub. This is so filling and the options are really endless when you consider all the toppings you can add. I personally love caramelized onions and jalapeños.
