Roasted chicken with mushrooms and caramelized onions
I’ve said this before and I’ll say it again; chicken is a very versatile protein that can be made in many ways.
The recipe I am featuring today was by my mother in law, who has such a magical touch in the kitchen. She can pull a recipe from Food Network’s website and somehow make it appear better than it did on tv. I promise you I’m not writing nice things about her because I’m afraid she might read this (I don’t think she even knows I keep a blog). Bottom line is the woman can cook!
On one of these rainy autumn days Orlando has been serving us, we visited my in laws who were making soup for dinner. Along with the soup, my mother in law made roasted chicken and white rice.
The chicken had mushrooms and onions and it all tasted so delicious.
