Roasted chicken with mushrooms and caramelized onions

I’ve said this before and I’ll say it again; chicken is a very versatile protein that can be made in many ways.

The recipe I am featuring today was by my mother in law, who has such a magical touch in the kitchen. She can pull a recipe from Food Network’s website and somehow make it appear better than it did on tv. I promise you I’m not writing nice things about her because I’m afraid she might read this (I don’t think she even knows I keep a blog). Bottom line is the woman can cook!

On one of these rainy autumn days Orlando has been serving us, we visited my in laws who were making soup for dinner. Along with the soup, my mother in law made roasted chicken and white rice.

The chicken had mushrooms and onions and it all tasted so delicious.

Roasted chicken with mushrooms and caramelized onions

Cook Time: 1 hour, 20 minutes

Total Time: 3 hours, 20 minutes

Roasted chicken with mushrooms and caramelized onions

Ingredients

  • 1 whole chicken
  • 1 cup mushrooms, sliced
  • 1 cup onions, diced
  • 1 tbsp olive oil (for cooking veggies)
  • herbs, seasoning (parsley goes well with this)

Instructions

    For roasting the chicken:
  1. Marinate your chicken in advance for most flavor (the night before or morning of) and keep in the refrigerator until ready to cook.
  2. Preheat oven to 400 degrees.
  3. Let chicken sit on counter for about 20 minutes to bring closer to room temperature.
  4. Roast chicken in the center rack of the oven for 20 minutes. Bring down the temp to 350 degrees and continue cooking for another hour. Inner temperature of chicken should be 165 degrees.
  5. Remove the chicken from the oven, slice and shred.
  6. Make veggies while the chicken is roasted:
  7. Saute mushrooms until cooked and onions until caramelized.
  8. Set aside and mix into shredded chicken later.

Notes

Servings depend on size of chicken, but generally each pound is two servings.

You know, this chicken can be re-purposed in fajitas or even a chicken salad sandwich later so don’t be afraid to roast a while chicken!
