Platanos Maduros – Sweet Plantains

One of the best things about the end of the summer is that ripe plantains are all over the stores.
Grocery stores cannot get rid of them fast enough and I take advantage.

I fry plantains as a side dish with my dinner, but they are so sweet it almost feels like a dessert (note you CAN eat it as dessert if you’d like).

One plantain is usually enough for two servings, but it can be one if you aren’t having rice and beans too like me.

Platanos Maduros – Sweet Plantains

Serving Size: 2

Platanos Maduros – Sweet Plantains

Ingredients

  • 1 ripe plantain
  • 1/2 cup oil

Instructions

  1. Heat oil in frying pan.
  2. Peel and slice plantain into 1/2 inch think slices. You can also slice lengthwise into strips (or even make fries).
  3. Cook plantain about 2 minutes on each side.
