How to make Tembleque

Tembleque (tem-bleh-keh) is a dessert made in Puerto Rico, which is basically coconut custard. The word “tembleque” means jiggly or wiggly – yes like Jello is wiggly and jiggly.

You can purchase mixes right by the Jello in your local supermarket (and follow the directions on the box) or you can make it on your own with the following ingredients:

  • 27 oz. coconut milk
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/2 cup corn starch
  • cinnamon and coconut for garnishing
Directions:
  1. Combine coconut milk, sugar, salt, and corn starch in a saucepan over medium heat.
  2. Once the mixture has thickened and starts to bubble (be careful!), remove from heat.
  3. Pour into mold (or individual dessert glasses) and allow to cool.
  4. Refrigerate for at least 1 hour.
  5. Serve.
